Ok, so as i plan my meals today, I am thinking how wonderful it will be to give you guys some ideas.. These aren 't all the dinners i've chosen, i have pulled some from my binder. These web sites are life savers for me, I just substitute healthier choices if i'm not pleased with the options the recipe gives. Also Allrecipes.com & Betty crocker.com ( i also use kraftfoods.com)has the nutritional fact box on every recipe, which is so great so i can see all those things i watch for my family's intake. Ravioli with Peppers and Sun-Dried Tomatoes

2 packages (9 ounces each) refrigerated Italian sausage-filled ravioli (any variety)
1/2 cup julienne sun-dried tomatoes packed in oil and herbs, drained and 2 tablespoons oil reserved
1bag (1 pound) frozen stir-fry bell peppers and onions, thawed and drained
2cups shredded provolone or Havarti cheese (8 ounces)
1.Cook and drain ravioli as directed on package.
2.In 12-inch skillet, heat oil from tomatoes over medium heat. Cook bell pepper mixture in oil 2 minutes, stirring occasionally. Stir in tomatoes and ravioli. Cook, stirring occasionally, until hot.
3.Sprinkle with cheese. Cover and cook 1 to 2 minutes or until cheese is melted.

Slow Cooker Chicken 'n Rice Gumbo Soup(HG)*

3/4 pound boneless skinless chicken thighs, cut into 1-inch pieces
1/4 pound fully cooked smoked sausage, (two 5-inch sausages), chopped
2 medium celery stalks (with leaves), sliced (1 1/4 cups)
1 large carrot, chopped (3/4 cup)
1 medium onion, chopped (1/2 cup)
1 can (14 1/2 ounces) stewed tomatoes, undrained
5 cups water
2 tablespoons chicken bouillon granules
1 teaspoon dried thyme leaves* (i hate this spice, so i omit.)
1 package (10 ounces) frozen cut okra, thawed and drained
3 cups hot cooked rice
Red pepper sauce, if desired
1.Mix all ingredients except okra, rice and pepper sauce in 4- to 5-quart slow cooker.
2.Cover and cook on low heat setting 6 hours 30 minutes to 7 hours or until chicken is no longer pink in center. Stir in okra. Cover and cook on low heat setting 20 minutes longer.
3.Spoon soup over rice in soup bowls. Serve with pepper sauce. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer’s directions for layering ingredients and choosing a temperature.

Extra-Easy Pizza

1 1/2 cups Original Bisquick® mix
1/3 cup very hot water
1 can (8 ounces) pizza sauce( i use spaghetti sauce)
1 package (3 1/2 ounces) sliced pepperoni ( also do Sausage, and rosemary chicken)
1/2 cup sliced fresh mushroom
1/2 cup chopped bell pepper
1 1/2 cups shredded mozzarella cheese (6 ounces)
1.Heat oven to 450ºF. Grease 12-inch pizza pan. Stir together Bisquick mix and very hot water; beat 20 strokes until soft dough forms.(try to add italian seasoning, YUM!)
2.Press dough in pizza pan. Spread pizza sauce over dough. Top with remaining ingredients.
3.Bake 12 to 15 minutes or until crust is golden brown and cheese is bubbly.
High Altitude (3500-6500 ft) No changes.

1 can (15 ounces) tomato sauce
3 teaspoons chili powder
2 teaspoons ground cumin
1/4 teaspoon dried oregano leaves
1/4 teaspoon ground cinnamon
1 medium bell pepper, cut into 1-inch pieces (1 cup)
1 can (19 oz) Progresso® red kidney beans, drained, rinsed
Shredded Cheddar cheese, if desired
1.Mix all ingredients except bell pepper, beans and cheese in 3 1/2- to 4-quart slow cooker.
2.Cover and cook on low heat setting 6 to 7 hours or until beef and vegetables are tender.
3.Stir in bell pepper and beans. Uncover and cook on high heat setting about 15 minutes or untilslightly thickened. Serve with cheese. I am also making, Gluten Free Spaghetti (HG), Super's Calzones, Baked Ziti, Pork stir fry, Stroganoff( Betty Crocker boxed preped meal $3), Hot Wings & add two left over nights ( usually previosly frozen left overs, to prevent "burn out") and two eat out nights, and you've got two weeks worth of meals, now i just need to apply it to my calendar to stay on tact with our schedule.
