mmmm, pad thai.
Now i will say this: i get my supplies at the asian market in town {BCS asian market, right by good will} {perfect excuse to stop by and browse} I know when i walk in i go to the produce section and grab fresh rice noodles in the pink pack & a bag of Mung bean sprouts.{They also have shelled whole coconut, i may grab one of those too.} If i need then i go over 2 isle over grab a jar of the seasoning too. This one has no MSG. But if you want MSG, they do have a big barrel for $99.95. Wish.i.was.joking. I also stop along the far wall and grab some vegetarian egg rolls- 36 mini egg rolls, no preservative, and all vegetarian for about $5. Then i head home & whip up this.
Picture of the Jar i use:
I should mention this is a recipe i learned from a friend who is from Vietnam. Straight up went to the store, with other women, followed her throught the store, jotted down brands, went to her house, and she made it for us. Fabulous.
Pad Thai
6 T oil
2 Eggs
1 Chicken breast thinly sliced { 2 if you like a lot of meat}
1 pack rice noodles
3 T pad thai paste {about $2 a jar. I get 3 uses out of one jar}
1/2 C water
1-2 t Soy sauce
1-2 t fish sauce {i use salt}
bean sprouts {i get mung}
chives or green onions
red pepper flakes and lime slices
- Mix pad thai paste w/ water and set aside
- Heat the pan then put half of oil in. Heat oil till pretty hot.
- Add eggs and a little soy sauce. stir for about 30 seconds unti eggs are cooked then remove form pan.
- Put remaining oil in the pan and heat till hot.
- Add Chicken, until mostly cooked.
- Add eggs back to pan.
- Add the noodles and pad thai paste and stir till evenly coated. {i cut my noodles as i put in}
- Let noodles cook until they are soft, stirring slowly and continuously. add fish sauce{salt} & soy sauce. if it gets dry add more water.
- Add bean sprouts and green onions, mix well and cook a few more seconds. don't let the sprouts get too cooked {will get soggy}
- Remove from heat and serve hot. Garnish with lime and red pepper flakes to taste. {i nix the pepper on the kids, but on mine i bring it}
Let me know if you try it. It's good and simple. WE love it.
*Also it may not be too good as leftovers, i am the only one will eat it again later.
I have made it with no eggs, so if there are left overs its a little better.
